Ingredients
Whole, Prime Rib (12-16 pounds) (7 bones - Frenched)
2 tbsp, Black Pepper (plus extra for Au Jus , follow steps)
3 tbsp, Kosher Salt (plus extra for Au Jus , follow steps)
Stem Thermometer
1 Roasting Pan
1.5 Tbsp All-Purpose Flour
2 Cups Beef Broth
Directions

1. Bring Rib Roast to room temperature - sitting out of refrigeration - for 4 hours

 

2. Set oven to broil at 500F.

 

3. Make Dry Rub: salt and black pepper, rubbing together to combine well.

 

4. Take dry rub mixture and generously rub it on rib roast.

 

5. Place the rib in the roasting pan with the fat side up and the bones down.

 

6. Cook the rib at 500F for 1.5hrs, uncovered (calculate 5 minutes for each pound of roast).

 

7. Turn heat off in oven and do not open the oven door for the next 2 hours in order to keep heat trapped.

 

8. After 2 hours, use a stem thermometer to ensure the roast has cooked to 135-140 degrees (for medium rare). If the meat needs more time to cook, cook it for an additional 10-15 minutes at 375F degrees (or until it reaches the desired temp).

 

9. Once the internal temperature is achieved, let the meat rest for 30 minutes out of the oven prior to serving. Save the Fat Drippings in the pan.

 

10. For the Prime Rib Au Jus: Add 1/4 cup of Prime Rib Roast Fat Drippings to a medium saucepan and melt on medium heat. Whisk in flour until the flour changes to a light amber brown color.Slowly whisk in the beef broth and bring to a boil over high heat until it thickens. Season with salt and pepper to taste.Remove from heat and pour over Rib Roast.
